This shake is so refreshing but kind of summery ice-cream tasting at the same time. Cucumber, lime, coconut water and protein powder may sound like a weird combination but trust me, it tastes absolutely amazing. I didn’t come up with this recipe myself, it’s actually on the meny of Lomax in Chelsea, and I got it recently one of their Blast classes and kind of fell in love. Unfortunately to get that vanilla ice-cream style flavour I think you have to use whey protein which I’m not a big fan of as it can be hard for the stomach to break down, but once in a blue moon I think it’s ok. I have been using a Swedish organic whey protein called Holistic that has enzymes to help digesting. If you are less fussed by the taste I suggest using a vegan protein powder instead.
- 1/3 juiced cucumber
- 1 juiced lime
- 1/2 cup coconut water
- 1 portion vanilla protein powder
Juice cucumber and lime and put it in your blender with protein powder and coconut water. Tip! You can also use a little bit of juiced pineapple, peach or pear to make it even more ice-cream tasting.
Option! Put some lucuma or baobab for an extra nutrition injection.
