Whenever I don’t know what to eat I always throw stuff together for a so called Food Bowl. It quite often becomes the quickest and most healthiest meals, not to mention super yummy. For the one on the picture I used:
- short grained brown rice re-fried with coconut oil and some thinly sliced beetroot
- mixed leaves
- chopped purple sprouted broccoli
- chopped golden raisins
- red onions
- hemp seeds
- Feta cheese
- water melon radish
Short grained brown rice is great for the digestion so quite often I make a big batch and keep in my fridge. I don’t eat a lot of dairy products but Feta and goat cheese are the exeptions as I love putting that in salads.
Tip! Make your dressing in the bowl your are putting the rest of the stuff in. This time I used a little bit of oliver oil, lemon juice, sea salt, black peppercorn and a tiny bit Dijon mustard.
