This has to be one of the best kale smoothie recipes ever. Young coconuts are amazing, and for a while I was almost obsessed with them. I used just take out the flesh with a spoon and blend it together with the water from the coconut (if you haven’t already tried this prepare for heaven!) but as with all good things if you over-do it, eventually I got a bit tired of it. This kale colada is super yummy but also has the nutritional benefits of kale which I’m sure you know is a real power food. Kale has more iron per calorie than beef and more calcium per calorie than milk. Iron helps with cell growth, liver function as well as transporting oxygen to various parts of the body. Kale is also full of vitamin A, C and K which is great for both your skin, metabolism and immune system. On top of this is anti-inflammatory and has a lot of antioxidants helping protecting your cells from cancer.
Tip! You can freeze kale, spinach and herbs to always have them ready for your smoothies.
- 1 1/2 cup of coconut water
- 1 handful of kale
- 1/2 frozen banana
- a few chunks of pineapple and/or mango
