This amazing and antioxidant filled green mash is one of my favourite things to eat with fish or any kind of veggie patties. It’s super easy to make and so good for you thanks to the nutritious edamame, broccoli and avocado. Avocado is optional but adds an extra smoothness that tastes amazing. This side dish provides a ton of vitamins and minerals including folic acid which is great for skin and hair , in other words proper beauty food!
- 1/3 small head broccoli
- 1 1/2 cup edamame beans
- 1 avocado
- lemon juice
- salt and pepper
- sesame or olive oil
1. Steam or boil the edamame beans and broccoli for about 10 minutes. I like the ratio to be 3/4 edamame and 1/4 broccoli but this is totally up to what you like. Too much broccoli doesn’t blend as well though.
2. Transfer your veggies into a food processor and add avocado, some lemon juice, sesame oil, salt and pepper. Pulse until smooth. You might need to add at little extra water.
3. Serve as a side to for ex. Ginger and Sweet Bell Pepper Salmon.
